Raspberry Cupcakes

After a busy week, I decided to relax and make some cupcakes with my cousin Heather ^^ I have never made cupcakes before so this is my first ever attempt and to my surprise it turned out to be quite easy. I wanted to make Raspberry cupcakes, below are all the ingredients I bought from Waitrose.

Step 1- Vanilla base cupcakes. I used an electric whisk to firstly beat non-salted butter (100g) and caster sugar (100g) until very fluffy. Then, added 2 eggs into the mix, half a tea cup of whole milk and 2 tea spoons of vanilla essence.

I placed the mixture into the cupcake holders and put into a pre-heated oven at 120°C, and baked for 20 minutes. Once it is cooked and out of the oven, let them cool for about  another 20 minutes (see below). In the mean time I made the icing 😛

Step 2 – Raspberry Icing. Using the electric whisk, beat butter (100g) mixed with icing-sugar (100g) and raspberry jam (half a pot). Beat it until it is soft and smooth. The raspberry jam will make the icing pretty and pink ^_^ Unfortunately it doesn’t look so ‘pretty’ here…..

When the base is cooled and the icing is ready, its time for the fun bit! Squeezing and playing round with fruit and decorations. Below is the final product!!

I remember failing tragically in my cookery classes at primary school. Since then I knew I was a bad at cooking and was convinced that I couldn’t cook anything. But after this, I think anyone can cook, just follow the receipes and its easy! Thanks to google and youtube, now I can make anything I want… Macroons next week? Haha Ok, one step at a time ….. ^^
